Spooky season is here and with it, lots of black buttercream cakes. I’m no stranger to the trend and before now I’ve stuck with a method of making my Favorite Chocolate Buttercream recipe and adding a few Tbsp of AmeriColor Super Black. Since this food color gel is tasteless, the black buttercream still tastes like chocolate buttercream but there is one little problem: it stains teeth temporarily (among other things). So I thought I’d do a little research and experimenting to see if I could create a black buttercream recipe that not only tastes great, it uses as little food coloring as possible to get a nice deep color.

Hot Cocoa Cake Recipe with Marshmallows
I know I’m not alone in saying that a mug of hot cocoa with marshmallows on top is downright nostalgic. It’s a distinct flavor combo that is enjoyable at any age, reminiscent of winter and the Holiday season. Remember how I talked about having a list of Holiday cake flavors I wanted to create? Well, this one has been on the top of the list for a few years now. So as soon as I had the energy toward the end of my maternity leave, I decided to do some recipe testing and check it off the list. I can’t tell you how many requests I’ve gotten for a cupcake version of my S’mores Cake with Toasted Marshmallow Buttercream. It’s one of my all-time favorite recipes (s’mores fan to the core, here!) and there are so many amazing flavors going on in it: graham cracker cake, decadent chocolate, toasted marshmallow buttercream. One of my friends described this chocolate buttercream perfectly: it’s the kind you have to put in the sink and cover with water so you don’t eat the whole bowl. I think she’s totally right, because time and time again I find myself eating this stuff by the spoonful. There’s something about using buttercream to glue candy onto gingerbread that evokes whimsy and creativity, no matter what age you are. It’s one of my favorite Holiday traditions, and although it’s a whole lot of fun to decorate a gingerbread house, I find that they end up being more for displaying than eating. Maybe it’s because in order to get a solid structure, you’ve got to make sure the gingerbread is rock hard, or maybe it’s because you’re just so proud of your creation that it’s too pretty to eat.
