No birthday is complete without a special dessert, and in most cases, that means cake! I think one of the most meaningful things you can do to celebrate someone is to make them a cake – even better if it’s their favorite flavor. A quick note about dietary restrictions: I have a small but growing collection of gluten-free dessert recipes, eggless cake recipes, and vegan dessert recipes in case you need them! And in most recipes, you can substitute an equal amount of 1:1 GF baking flour to make the cake gluten-free.

I made this for my birthday this year and I already feel like making it again! It’s homemade cookie dough chunks folded into no-churn chocolate and vanilla ice creams, swirled together on an Oreo cookie crust. After freezing overnight it becomes the ideal sliceable consistency, is so creamy and chocolatey, rich but not overly so, and has the perfect amount of cookie dough chunks in every bite!
