Ever since I picked up this set of Wilton Cake Combs from my local JOANN, I have been absolutely obsessed with making striped buttercream cakes. Before cake combs became part of my life, I was getting the striped buttercream look using piping bags, but my hands aren’t the steadiest so I’d always end up with stripes that were uneven and a bit wonky. Being the perfectionist I am, I’ve been loving how these cake combs do all the hard work of creating perfectly spaced stripes for me! And after a few rounds with them, I’ve learned all the secrets of ensuring flawless buttercream stripes, every time.
My momma was the queen of birthday sheet cakes. She baked them in her favorite casserole dish and served them up for every one of my birthdays as a kid, always covered in canned frosting and that grocery store tube gel for writing out Happy Birthday. How are the Holidays treating you? I’m in full on Christmas spirit mode over here, with so many ideas for festive Holiday cakes and no time to do them all! I like to really sink into this season because there are so many fun things to do with friends and family, and although I love decorating Holiday-themed cakes I try not to spend too much time in the kitchen this time of year because I don’t want to miss any festivities. This Merry & Bright cake was at the tippy top of the list though – it’s the second year in a row I’ve made this design, and I just had to share it with you because it’s so easy to recreate!
One of the most frequent questions I get as a cake decorator is how I get my buttercream cakes so smooth and sharp. To answer you, I’m going to be completely candid here and not pretend that my cakes are absolutely flawless every time. The truth is, with most of the cakes I design, there are plenty of opportunities to hide small flaws in the buttercream finish. A ganache drip over this crease, sprinkles around that bottom edge, and before you know it the cake appears flawless with all those problem areas covered up! Ok, maybe that’s just me being
lazy creative. Despite that, I have developed some skills and learned some tips over the years that help me get pretty darn close to a flawless buttercream finish, and I’m excited to share them all with you!
